We elaborate this pale rosé inspired by the classic "clarete" produced at our Estate hundreds of years ago. A roller coaster of mixed sensations, resulting in a unique wine.

TASTING NOTES

Visual fase: bright pale pink with cherry reflections.

Nose: expressive and complex, noting stone ripe fruit, citric notes and white and pink flowers.

Taste: fresh mouth attack with stone fruit reminiscences, light but mouth-filling, soft and fresh at the same time, a roller coaster of mixed sensations, resulting in a unique wine.

 

WINEMAKING

The grapes are hand harvested in 25 kg boxes at our most young, fresh and light vineyards. The sorting is carried out by hand during the next hour at our contiguous winery.

Soft destemming and quick drawing off without mechanical extraction so that the colour transfer to the must is minimum. Fermentation takes place at a controlled temperature of 11 ºC during approximately 28 days.

Subsequent rackings and filtering with cellulose trays which respects the organoleptic properties of the wine and resulting in a perfectly bright and clean wine.
